Delicious Raw Vegan Cookies just in time for Christmas! There is nothing quite like a cozy night in by the fire or with the lights on low watching a Christmas Classic and enjoying some cookies and mylk. It's total Bliss.
Below is a simple recipe you can try to make your very own Vegan Cookies! Alternatively, you can skip the cooking altogether and grab on of these flavours over at iRaw Healthy Habits.
Enjoy with a cup of herbal tea or some Mylk!
For the Cookies:
1 cup buckwheat, finely ground
1 cup coconut flour, finely ground
1/2 cm ginger, finely shred
1/4 cup coconut nectar
1/2 cup goji berries, finely ground
1/4 cup filtered water
pinch black pepper
2 tablespoons fresh lemon juice
1 teaspoon lucuma or maca (optional)
Mix all ingredients together in a food processor, roll out with rolling pin and cut into shapes.
Dehydrated for 6 hours at 115F
For the Chocolate Coating
5 tablespoons cacao butter, gently melted
1.5 tablespoons raw cacao
1/2 tablespoon carob
1 tablespoon coconut sugar, finely ground
Mix the dry ingredients into the melted cacao butter, dip the cookies in and leave on a mesh to drain excess chocolate off (which you can reuse)
Sprinkle on top gojis (finely ground, releases flavour in the natural oil if the berries)
Et viola: prét à manger!
